  1. Start by rinsing the lentils under cold water until the water runs clear, then set them aside to drain.
  2. Peel and dice the onion into small, uniform pieces to ensure they soften evenly during sautéing.
  3. Peel and dice the carrots into bite-sized pieces to release their sweet aroma as they cook.
  4. In a skillet over medium heat, warm the olive oil until it shimmers, then add the diced onion and minced garlic. Sauté for about 3-4 minutes until fragrant and translucent, with a gentle sizzle and a golden hue beginning to form.
  5. Add the diced carrots to the skillet and cook for another 2-3 minutes until they start softening and releasing a sweet aroma, with slight caramelization around the edges.
  6. Transfer the sautéed vegetables from the skillet into the slow cooker, spreading them evenly across the bottom.
  7. Pour in the vegetable broth, then stir in the tomato paste, cumin, and smoked paprika, mixing well to combine all the flavors.
