Ingredients

  • 3 tablespoons unsalted butter good quality
  • 4 cloves garlic fresh, minced
  • 1 tablespoon olive oil extra virgin preferred
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 4 large carrots peeled and cut into 2-inch pieces
  • optional fresh herbs parsley or thyme, chopped

Equipment

  • Baking sheet
  • Parchment paper
  • Small saucepan
  • Silicone spatula or spoon
  • Tongs or spatula

Method

  1. Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper for easy cleanup.
  2. Peel the carrots if desired, then cut them into uniform 2-inch pieces to ensure even roasting. Spread them out on the prepared baking sheet.
  3. In a small saucepan, melt the butter over medium heat, listening for it to bubble gently and smell fragrant. Toss in the minced garlic and cook for about 1 minute until aromatic and slightly golden.
  4. Pour the garlic butter into a large bowl and add the olive oil, salt, and pepper. Whisk together until well combined.
  5. Transfer the carrots into the bowl and toss thoroughly to coat each piece evenly with the garlic butter mixture.
  6. Arrange the coated carrots in a single layer on the prepared baking sheet, spreading them out to avoid overcrowding.
  7. Place the baking sheet in the oven and roast for 25-30 minutes, flipping the carrots halfway through with tongs or a spatula. You’re looking for deep golden edges and tender insides.
  8. Check for doneness by piercing a carrot with a fork; it should slide in easily, and the edges should be caramelized and crispy.
  9. Remove the carrots from the oven and let them sit for 5 minutes to allow the flavors to settle and the texture to firm up slightly.
  10. Optional: sprinkle freshly chopped herbs over the carrots for a burst of freshness and color.
  11. Serve these fragrant, caramelized carrots warm as a perfect side dish that’s both comforting and elegant.

Notes

For extra sweetness, drizzle a little honey over the carrots before roasting. Adjust garlic and seasoning to taste for a milder or more pungent flavor. Using fresh herbs enhances brightness, but dried herbs can be added after roasting if preferred.
